Güde Kappa salmon knife 32 cm - blade and handle made of CVM steel
The name alone suggests that salmon knives are intended for cutting salmon. We're happy to explain why exactly. In order to cut smoked salmon into thin slices, for example, you need a narrow, thin, and above all long blade. Only with long, even strokes will it look the way it should. Of course, the knives are also suitable for other purposes. Salmon has not yet claimed exclusive rights to their use.
The Kappa salmon knife has a 32 cm long blade made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. With its narrow and long blade shape, you can cut fine slices with just a few strokes.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special steel blend and the elaborate manufacturing process with over 30 manual steps give the rust-free blades with a hardness of approximately 58 HRC a special robustness and durability.
The blade and handle are made from a single piece of steel. The extremely hygienic handle with its smooth polished surface fits perfectly and securely in the hand. The full metal construction provides the knives with a unique weight distribution and balance.
