The salmon knife, intended for cutting salmon, is aptly named. We are happy to explain why. To cut smoked salmon into fine slices, for example, you need a narrow, thin, and above all, long blade. Only with long, even strokes does it look as it should. Of course, the knives are also suitable for other purposes. Salmon has not yet claimed exclusive rights to its use.
The Kappa salmon knife has a 32 cm long blade made of stainless, hand-sharpened chrome-vanadium-molybdenum knife steel. With the narrow and long blade shape, you can cut fine slices with just a few strokes.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, acts as a counterweight to the blade. The knife is perfectly balanced. The special mix of steel and the elaborate manufacturing process with over 30 manual steps give the stainless blades a special robustness and durability, with a hardness of about 58 HRC.
Blade and handle are made from a single piece of steel. The highly hygienic handle with its smoothly polished surface fits optimally and securely in the hand. Due to the full metal construction, the knives offer a unique weight distribution and balance.
