The blade is characterized by a hardness of 58±1 HRC, which ensures long-lasting sharpness. Thanks to the double-edged grind, you can make fine cuts with minimal effort. The narrow back of the knife and the flexibility of the blade make it easier to work along bones and joints, allowing you to achieve clean fillets.

The seamless transition between the blade and handle ensures maximum hygiene and prevents the accumulation of bacteria. The ergonomically shaped stainless steel handle is filled with sand to provide optimal balance. The characteristic black dots on the handle ensure a secure grip, even with wet hands.
