If you are looking for a versatile and precise kitchen knife, the Global G-66 Chop Knife with an 18 cm blade length is an excellent choice. The curved blade, similar to a Kiritsuke, is perfect for various cutting techniques, especially for chopping vegetables with the chop technique. The hollow edge reduces food sticking to the blade, making it easier to work with sticky or moist ingredients.

Made from high-quality Cromova 18 steel, the blade offers a hardness of 58±1 HRC, ensuring durability and long-lasting sharpness. The double-sided, fine edge allows for precise cuts. The seamless transition between the blade and handle ensures hygienic handling. The ergonomically shaped stainless steel handle is filled with sand to achieve optimal balance, and the small, black lacquered dimples provide a secure grip even with wet hands.

With a blade height of 5 cm and a thickness of 2.3 mm, the knife is both stable and flexible. The total weight of 168 g allows for fatigue-free work, even during longer preparations.
